Pizza Roll-Ups

 

For all you pizza lovers, this recipe is for you! This little easy snack recipe is great for people on the go, and who don’t have time to make an extravagant meal. They are always a favorite for movie nights at home as well. I wanted to thank you for the amazing feedback from my salmon recipe, but a few of you commented it was a bit “too boujee” or you weren’t a salmon fan. So this recipe might appeal more to those with a non-boujee palate. Kidding, but this recipe takes a total of 12-15 minutes and they are so delicious and they have a perfect crunch. I have included a short video to better explain the process down below.

*For you non-meat eaters, no worries! This dish allows you to make it your own by adding your favorite toppings. Such as cooked peppers, mushrooms, or onions.

Ingredients 

2 large or medium-sized low sodium tortillas

4 tablespoons marinara sauce

⅛ cup of cheddar cheese (any cheese works)

7 pieces of pepperoni 

Dash of Olive oil or spray-on butter

Garlic salt to finish off

(this recipe will create 4 pizza roll-ups)

 

Directions

  1. Preheat air fryer or oven to 400 degrees
  2. Cut the tortilla into four vertical strips. Place 1 tablespoon of marinara at the bottom of the vertical piece of the tortilla. 
  3. Add cheese on the top of the marinara.
  4. Slice pepperoni in half. Place three pieces of pepperoni on the top of the vertical tortilla pieces.
  5. Take the two pieces on the end of the tortilla (round pieces) and place them in the middle of the vertical piece. It should look similar to a cross.
  6. Take the bottom of the vertical piece, roll it up towards the middle. (marinara + cheese) Then roll the top piece down towards the middle. (pepperoni) Then fold both sides into the middle. This will now create a small pizza square. (see video for better explanation)
  7. Place a toothpick through the middle of the pizza roll-up, keeping everything together.
  8. Add a light spray of spray-on butter/olive oil and add garlic salt to the top of the pizza roll-up.
  9. Place pizza roll-ups into the oven/air fryer for 5 minutes at 400 degrees. 
  10. After five minutes, flip them over. Continue baking for an additional 5 minutes.
  11. Allow cooling for a few minutes. To dress them up, feel free to side with marinara.

If you want to “boujee” up the pizza roll-ups, feel free to substitute the marinara for pesto. (or use both) When they come out of the oven, sprinkle oregano or basil on top. Bon appetite!
