Grammy’s Famous Potato Soup

Y’all I am treating you to one of my family’s all-time favorite recipes. Grammy’s potato soup! YUMMY IN MY TUMMY. This is not just any type of potato soup. The soup is very light and scrumptious, and you’re probably going to want to eat 3 bowls at once. No joke 😉

Ingredients

Serving: 8-10 bowls

  • 5-6 potatoes
  • Half a gallon of 2% milk
  • ½ cup of heavy whipping cream
  • 2 eggs
  • ¾ cup of flour
  • 1 onion or one whole shallot
  • 1 tablespoon of salt
  • 2 teaspoons of pepper
  • 1 tablespoon of olive oil
  • 1 tablespoon of garlic
  • 1 tablespoon of thyme

Directions

  1. Boil water at high heat.
  2. While the water is boiling, peel your potatoes. Dice them up into small little squares. 
  3. It’s time to make the “riblets.” (very similar to dumplings) Whisk two eggs into a bowl, and add the flour sparingly into the eggs. This will create a dough-like consistency. (Watch my Tik Tok for a better explanation and vision)
  4. Next, add your potato squares into the boiling water for about 3 minutes.
  5. Tear off little “riblets” and add them into the boiling water with the potatoes. The riblets should be about ½ inch around, it should be a little ball. The riblets only take about 3 minutes to cook. (potatoes should take 6 minutes, and riblets 3 minutes)
  6. Once the potatoes and the riblets are cooked, add them to a strainer. Then mince one whole onion (or one whole shallot). Add the olive oil to the pot, and add the onions and garlic for them to be caramelized. The onions should be cooked on low/ medium heat for about 5 minutes. Once the onions have a golden look to them, it’s time to add the milk. 
  7. Add the milk and the heavy whipping cream to the caramelized onion/ garlic mixture. 
  8. Add the strained potatoes and riblets into the pot. Let the milk warm up on medium heat.
  9. Add the thyme, salt, and pepper into the soup.
  10. After about 5 minutes on medium, the soup is ready to enjoy!
