Homemade Churros

Heyyyoo friends!! Did you miss me? Well, I certainly missed all of you! 

My class blog project is actually over which means I don’t have to be posting anymore, however, I’ve decided to continue because I thoroughly love doing this. I hope you love reading my blogs just as much. Rather than sharing two blogs a week, my goal is to post once a week.

Let’s treat ourselves, friends! Today I am going to give you a yummy churro recipe for an air fryer. Yum! Don’t worry, if you don’t have an air fryer, you can still make this recipe. I made these churros a couple of weekends ago for a big Mexican dinner, and man oh man were they delicious. I doubled the batch because I had a feeling they would be a big hit…which they were!

Ingredients 

  • 5 tablespoons of butter
  • 2 tablespoons of sugar
  • ½ teaspoon of salt
  • 1 teaspoon of vanilla
  • 1 cup of water
  • 1 cup of flour
  • 2 eggs
  • ½ cup of cinnamon sugar 

Directions 

  1. Melt the butter on medium heat. Add sugar, salt, water, vanilla, and flour into the saucepan. 
  2. Continue stirring on low heat for 3-4 minutes until the mixture becomes a dough-like consistency.
  3. Place the dough in a bowl, and let it cool for 5 minutes.
  4. Next, add one egg at a time until the eggs are mixed through the dough evenly.
  5. Once the dough is ready, add the mixture into a piping bag or I used a Pampered Chef accent decorator tool.
  6. You can make these churros as long as you would like. I personally like them about 2-3 inches in length. Place a piece of aluminum foil on a cookie sheet. Spray the foil with cooking spray. Then place the churros on the aluminum foil.
  7. If you’re using an air fryer, you might have to do 2 different batches. Bake the churros at 400 degrees for about 6-7 minutes. 
  8. Once the churros are cooked to your liking, lightly spray cooking spray over the top. Roll each churro in the cinnamon sugar. Enjoy!

Directions for the stove

  1. You need about an inch of canola oil in your pan on medium/ high heat.
  2. Once the oil is hot, add them to the skillet.
  3. Allow the churros to cook for about 5-6 minutes until they are golden brown.
  4. Remove churros from the skillet, and dry them on a paper towel until dry.
  5. Lightly spray the churros with olive oil, and roll them in cinnamon sugar.

Grammy’s Famous Potato Soup

Y’all I am treating you to one of my family’s all-time favorite recipes. Grammy’s potato soup! YUMMY IN MY TUMMY. This is not just any type of potato soup. The soup is very light and scrumptious, and you’re probably going to want to eat 3 bowls at once. No joke 😉

Ingredients

Serving: 8-10 bowls

  • 5-6 potatoes
  • Half a gallon of 2% milk
  • ½ cup of heavy whipping cream
  • 2 eggs
  • ¾ cup of flour
  • 1 onion or one whole shallot
  • 1 tablespoon of salt
  • 2 teaspoons of pepper
  • 1 tablespoon of olive oil
  • 1 tablespoon of garlic
  • 1 tablespoon of thyme

Directions

  1. Boil water at high heat.
  2. While the water is boiling, peel your potatoes. Dice them up into small little squares. 
  3. It’s time to make the “riblets.” (very similar to dumplings) Whisk two eggs into a bowl, and add the flour sparingly into the eggs. This will create a dough-like consistency. (Watch my Tik Tok for a better explanation and vision)
  4. Next, add your potato squares into the boiling water for about 3 minutes.
  5. Tear off little “riblets” and add them into the boiling water with the potatoes. The riblets should be about ½ inch around, it should be a little ball. The riblets only take about 3 minutes to cook. (potatoes should take 6 minutes, and riblets 3 minutes)
  6. Once the potatoes and the riblets are cooked, add them to a strainer. Then mince one whole onion (or one whole shallot). Add the olive oil to the pot, and add the onions and garlic for them to be caramelized. The onions should be cooked on low/ medium heat for about 5 minutes. Once the onions have a golden look to them, it’s time to add the milk. 
  7. Add the milk and the heavy whipping cream to the caramelized onion/ garlic mixture. 
  8. Add the strained potatoes and riblets into the pot. Let the milk warm up on medium heat.
  9. Add the thyme, salt, and pepper into the soup.
  10. After about 5 minutes on medium, the soup is ready to enjoy!

Yummiest Chicken Marmalade Recipe

Chicken Marmalade Recipe

Most of you probably have never used orange marmalade in a recipe before. This means most of you will need to run to the grocery store to grab the orange marmalade. Trust me you won’t regret it because you will love it and want to make it over and over again! It’s a perfect consistency, sweet and spicy. My favorite is to add sauteed red peppers, onions, and even mushrooms to the dish. You can also use the sauce for noodles and or rice. This sauce goes with everything.

Ingredients 

  • 3 skinless and deboned chicken breast
  • 1/8 teaspoon of salt
  • 1/8 teaspoon of pepper
  • 3/4 cup half and half or whipped cream
  • 1 tablespoon orange marmalade
  • 1/2 tablespoon of Dijon mustard
  • 1/8 teaspoon of red pepper flakes (as much as you would prefer)
  • 1 tablespoon of Parmesan cheese on top (optional)

Directions

  • On medium-high heat cook chicken breast all the way through and set aside
  • Take the pan or skillet off direct heat, then add the half and half to the pan (leave all chicken juices in the pan)
  • Add the dijon mustard, sweet orange marmalade, salt & pepper, red pepper flakes to the skillet (add more for more heat)
  • Return to medium-low heat to thicken the sauce
  • Sift a tablespoon of flour into the sauce gently as you continue to stir
  • Add parmesan cheese on top (optional)
  • Once the sauce is the consistency of your liking, enjoy!

Tips

  • Before you cook the chicken, I like to butterfly the chicken breasts or use a meat mallet to make the chicken thinner. That way the chicken cooks faster. 
  • If you are ever making a sauce, remember you can always sift cornstarch or flour into the sauce to make a thicker consistency.

Peanut Butter Protein Balls

PROTEIN PEANUT BUTTER BALLS 

Hello lovely friends!!

I want to share one of my favorite go-to healthy protein snacks. These protein balls are ideal to eat after a workout or even as a little guilt-free sweet treat. This recipe allows you to add and tweak to suit your taste buds. These little protein balls are insanely addicting! Enjoy!

Ingredients:

 This recipe makes 12 balls

  • 1 ¼ rolled oats
  • ½ cup of vanilla protein (any kind you prefer)
  • ¾ cup peanut butter
  • ¼ cup maple syrup or honey
  • ¼ cup of chocolate chips

Directions

  • Combine all the ingredients into a big bowl
  • Keep stirring until consistency is ideal to roll them into small balls
  • To make the protein balls not as solid, add a small dash of water to make the consistency you prefer
  • After rolling the protein balls, place them in the fridge for 15-20 minutes for them to set up
  • Then enjoy!

Notes:

  • To keep them fresh, store them in an air-tight container keep them in the fridge 
  • You can keep them up to 7-10 days in the fridge
  • You can double the recipe and keep half the batch in the freezer for future use
  • Feel free to add some of your favorite items to the recipe such as; coconut flakes, nuts, or dried fruit-make it your own!

 

 

Pizza Roll-Ups

 

For all you pizza lovers, this recipe is for you! This little easy snack recipe is great for people on the go, and who don’t have time to make an extravagant meal. They are always a favorite for movie nights at home as well. I wanted to thank you for the amazing feedback from my salmon recipe, but a few of you commented it was a bit “too boujee” or you weren’t a salmon fan. So this recipe might appeal more to those with a non-boujee palate. Kidding, but this recipe takes a total of 12-15 minutes and they are so delicious and they have a perfect crunch. I have included a short video to better explain the process down below.

*For you non-meat eaters, no worries! This dish allows you to make it your own by adding your favorite toppings. Such as cooked peppers, mushrooms, or onions.

Ingredients 

2 large or medium-sized low sodium tortillas

4 tablespoons marinara sauce

⅛ cup of cheddar cheese (any cheese works)

7 pieces of pepperoni 

Dash of Olive oil or spray-on butter

Garlic salt to finish off

(this recipe will create 4 pizza roll-ups)

 

Directions

  1. Preheat air fryer or oven to 400 degrees
  2. Cut the tortilla into four vertical strips. Place 1 tablespoon of marinara at the bottom of the vertical piece of the tortilla. 
  3. Add cheese on the top of the marinara.
  4. Slice pepperoni in half. Place three pieces of pepperoni on the top of the vertical tortilla pieces.
  5. Take the two pieces on the end of the tortilla (round pieces) and place them in the middle of the vertical piece. It should look similar to a cross.
  6. Take the bottom of the vertical piece, roll it up towards the middle. (marinara + cheese) Then roll the top piece down towards the middle. (pepperoni) Then fold both sides into the middle. This will now create a small pizza square. (see video for better explanation)
  7. Place a toothpick through the middle of the pizza roll-up, keeping everything together.
  8. Add a light spray of spray-on butter/olive oil and add garlic salt to the top of the pizza roll-up.
  9. Place pizza roll-ups into the oven/air fryer for 5 minutes at 400 degrees. 
  10. After five minutes, flip them over. Continue baking for an additional 5 minutes.
  11. Allow cooling for a few minutes. To dress them up, feel free to side with marinara.

If you want to “boujee” up the pizza roll-ups, feel free to substitute the marinara for pesto. (or use both) When they come out of the oven, sprinkle oregano or basil on top. Bon appetite!
